This is a great filling for a Savory Pancake:
( Fills 6-8 Pancakes)
3 Cooked chicken fiillets, Diced into 3 cm cubes
1 washed and sliced leek
1 clove of garlic crushed.
1 Cup of diced bacon of your choice
1/4 cup of plain flour
200g of Cashel blue cheese
2 cups of Fresh Cream
Salt and Pepper to taste
1/4 of Chopped Fresh Parsley.
In a large Saucepan, Heat the Rapeseed oil, add leeks and garlic and saute for 3 minutes to soften.
Careful garlic can burn quickly.
Add the cubes of bacon, then the flour stirring continuously so the flour doesn't stick to the bottom of the pan. Add the cream a little at a time on a low heat,
Add the cooked chicken and all other ingredients and keep on a low heat stirring every couple of minutes.
Season to taste
If the mixture is too thick add a little more cream. take it off the heat and leave to cool for 5 minutes.
with you freshly cooked pancakes, Fill each pancake with 2 tablespoons of mixture.
You can make each pancake into a parcel if you wish.

This Mixture will keep in the fridge once colled for a good 3 days or else you can freeze it.
