A healthy Option to Beat the January Blues.......
1 Large peeled Carrot
1 Large peeled Parsnip
1/2 a small peeled turnip or swede
1 cup of cooked chickpeas
1/2 cup of olive oil
2 tomatoes Quartered
1/2 red onion finely sliced
1 head of cos lettuce
1 heaped teaspoon of Garam masala spice
Salt and pepper to taste
Cut the carrots parsnips, swede (or turnip) and onions at angle and transfer to a roasting tray. Add the olive oil and Garam masala spice and toss all until evenly coated.
Put in a preheated oven at 170 degrees Celsius. for 20 minutes or till soft but firm to touch. Add Chick peas and toss with rest of vegetables. Cook for further 3 Minutes
While the veg is in the oven, Wash and roughly chop the cos lettuce.
Arrange evenly on 4 plates with a couple quarter of tomatoes, When your roasted veg is ready arrange over the lettuce evenly and serve warm
